Roasted Pumpkin Seeds

Looking for a creative way to use those leftover Pumpkin seeds after carving your jack-o’-lantern? Don’t toss them just yet! Roasting Pumpkin seeds is not only easy, it's also a fun way to experiment with flavors. With a dash of your favorite herbs and spices, you can turn these seasonal snacks into a savory treat, perfect for munching or topping off soups and salads. Whether you prefer a smoky blend, zesty citrus notes, or classic herbs like Rosemary and Thyme, roasted Pumpkin seeds are a delicious way to reduce waste and get creative in the kitchen.

Ingredients

Pumpkin seeds, from 1 large Pumpkin

Salt

Desired herbs, powdered

Instructions

  1. Separate your Pumpkin seeds from the Pumpkin insides.
  2. Wash them and place them in a single layer on a kitchen towel to dry overnight.
  3. Preheat oven to 350ºF.
  4. Arrange the seeds in a single layer on a parchment or silicone lined baking sheet. Spray with a baking spray if you don’t have either of those.
  5. Sprinkle salt and any of your favorite herbs on the seeds to your desired level and mix them by hand. We like to use Rosemary, Onion and Garlic seasonings, and nutritional yeast.
  6. Bake for 15-20 minutes, stirring them halfway through cooking. They are ready when the seeds are golden brown.
  7. Let cool and enjoy!
